We are trying to connect a Servo Motor with Arduino and make it spin differently with high and low pitch or volume. At the moment we have been using a Piezo speaker but we have been unable to make it react to sound, only knocking. Would anyone know the correct kind of microphone we could use and the correct code?

How are you trying to read varying frequencies?
When you amplify the audio signal of the piezo, you'll get a higher signal even at low intensity/volume.
