Visual Representation of Movement Using Arduino, Processing and an Accelerometer

I do not know much about programming, but I am looking for some code that would take the average amount of movement every minute for about 8 hours and make a graph of it in processing.

That sounds like a pretty obscure requirement and I am not optimistic that you will find somebody else who has solved exactly that problem, so you will need to write your own solution. It sounds like a straight forward problem and the Arduino code should be relatively simple. How much effort you put on the Processing side is up to you.
