i live in college town and found a ton of old VCRs as people graduate and move out. I usually tare out the motors. how can I determine what voltage is ideal to run the motor if there's no markings on them?

Use a multimeter to measure the voltage being supplied to the motors.

i've got a half dozen or so of the motors but i've already tossed all of the actual vcr cases
I suppose you could try measuring the resistance and hazard a guess from that. Or apply a very low voltage, and then gradually increase it until you get the speed/torque characteristics you want - stopping if the motor seems to be getting hot.
