Washing Machine Control

I am new to Arduino, but have been completing labs in my book.
I now have a real-world application.
I need to remove the factory washing machine timer and replace it with an Arduino control. (The washing machine will be used for a special purpose.)
I know how to interface it with the motors, but I need advice on the control portion.
I have an Arduino Uno and would like to control the 'washer' through a touch screen interface.
I would like to set the 'wash' time or the 'spin' time in minutes and seconds.
I would like a large touch screen display.
E-Bay has countless displays for sale. Is one better suited for (or easier for a newbie) to work with?

You might be able to use relays across the contacts in the mechanical timer to control the machine.

Maybe you need to modify your Original Post and change the title to something more appropriate ?
Perhaps "Help me choose a touch screen"
