What is that called? The thing that allows two wires to easily connect/disconnect. Also, can you get these for just one wire? The one in the picture has a 4 connector one.

I don't have a size reference, but it looks like a 90 degree header with a polarized shroud.

They show up a lot used in those Asian E-bay shield boards called sensor shields to be attached to their various 'sensor modules'.
The Asians seem to call them 'buckle connectors' and they seem to come in 3 and 4 pin versions.
