But i can't figure out how to do it using arduino and which sensors to use.

Can you explain this in detail "black conducting foam used to pach through hole ic's" ?? How will the black foam act as a pressure sensor and how will i get the whole map of the foot ?

This should be available from a multitude of sources supplying electronic material.
The resistance decreases when compressed. So my idea was to place a piece of foam between maybe a circuit board with copper bands making contact on the lower side and flexible strips of copper foil going 90 degrees across the copper bands on the circuit board. You can then use analog multiplexers to measure he resistance at each crossing. Maybe you have to cut the foam into small quadratic pads in order to get better readings.
I have used this foam to measure pressure some time ago, but i have not tried a 2 dimensional readout. Keep me posted.
