Does anyone know how this touch switch detects touch?

Check I believe the schematics have been posted, from that it would be easy to determine what they are doing. Do not expect anything fancy or complicated. Nice link, a great sales brochure, not very technical.

maybe a multitouch capacitive sensor thingy with a dedicated chip doing the gesture recognition?

I think it might be a flexible touch PCB but it doesn't make sense for 25$ switch.

Oh, I dunno: you can do simple gestures - like sliders & wheels - with the touch controllers in some pretty low-end microcontrollers; eg, AVR & SAMD:
