I am looking to start some new project and would like some ideas for sensors that are a bit out of ordinary?

I've seen somewhere an interesting sensor, like sort of temperature sensor, but with 5 pixels, so it can give you an image of the temperature distribution. If I put it on a servo I can scan around and form an image of the environment.

Thermal mapping is rather tricky an I wouldn't expect you to be able to get that in a simple sensor. Don't mix up temperature sensors with IR imaging these are separate things. Most image sensors that work at IR only do so at near IR - that is IR that is near viable light and so don't actually show much in the way of temperature information for things below about 800oC
