nRF
On-board sensors e.g. environment, accelerometer
Header pins soldered
It also must be very affordable, say 10 US dollars, so I shall be looking into the ESP ecosystem ?
Projects could be:
Alarm system
Air quality monitor
Game controller
Video transmission
Health monitor
Wear-ables

I'm not aware of any 5GHz WiFi capable cheap board
with CAM, do you mean a camera?
with nRF you means something like NRF24L01?
you want everything in one board?
I don't think it exists, and $10 sounds low anyway (there are cheap ESP32 Cam module from the Far East but they won't match all your needs)
Sounds like a very capable board or a mere $10, if you find one do let the forum know.
'Wearable' suggests very small ?
