Pro Mini, for it's very small size. Due, for it's power and I/O capability.

Considering all the above, my choice is Arduino UNO.

The UNO was my first board. Then I got the MEGA. I like the MEGA because it has more pins

The ESP32 is it pure arduino or not?

I don't think so, just it has the core code and Arduino IDE made for it.
I recon its the UNO/Nano hyped up and bought into the new gen of open source controllers.
