I have these diodes and googled alot but still dont know what exactly the difference is between the diode i have. Here are the specs:

What i am trying to do is connect 3 solar panels (5V 250mAh) together to create at max 15V 750mAh.
But im lost do i even need a diode cant i just connect them together like placing 2 batterys together to double the voltage?

That's not going to work. Apart from the fact that you mean mA (current) not mAh (capacity), when you connect these in series ONLY the voltage increases. So you'll end up with 15V but still only 250mA (and you'll probably only get that in in midday summer sun in the middle of the Arizona desert).
