I have an arduino with firmata on it and i have designed a processing based GUI for solar car telemetry..
since we are planning 2 have low power consuming netbook handy..which runs windows CE..

can we use it?
we need it only to display data..we are not goi for LCD as they look bad and have substantial amount of wiring..

can we use it?

Does it have a USB port? Can you install and run Processing on it? If you answered yes to both questions, then, yes, you can use it.

Look bad?

A serial LCD uses 3 wires - +V, Gnd, and a control wire. Hardly a substantial amount.
