I am wondering if i can wirelessly send information through IR sensors. Like the basic ones as in a cheap rc car type of IR

Yes, you certainly can. You would have to determine your communication scheme though. For example 2 pulses might drive the RC car forward while 3 pulses make it stop. It's up to you.
One word of caution though, some IR receivers (especially the ones made for TV remotes) require that you send modulated pulses. It's still possible to transmit information, you just need to take that modulation into account.
