The BT signal is strictly digital. It must be decoded to yield equivalent analog values, and a fast DAC is needed for output to the aux jacket. Not what an Arduino can do by itself.
Moreover, the Bluetooth signal is time-sliced with both devices transmitting and receiving in their own little time slice. Not a continuous stream of data.
