A protocol is an agreed upon specification for how data is to be represented in a data stream. Until you have a means of transmitting the data, defining a protocol is premature. The hardware does not depend on the protocol. The protocol does not depend on the hardware.
My advice is to not worry about a protocol.

My advice is that you are mis-using words and not addressing the real issues. The real issues are distance, the built environment, and costs. You may find you can do what you want with a $5 bluetooth module. Low cost, no programming, and you don't need to know how to spell proctool. On the the other hand, you might not.
I normally use bluetooth to receive data in the manner you describe, but I cannot get a signal through the bathroom wall, with the laptop one metre from the Arduino. I guess this is entirely due to that wall having foil insulation.
