I am trying to send data over internet. I'll be collecting some data with interval (Temperature, humidity etc) and sending it to a server for a long time. For this, I am searching for a GSM/ GPRS module that'll work with the normal sims from Germany. The module should be reliable for a long time and should get good connection where network is not the best. I would much appreciate if someone can suggest me some modules.
GSM/GPRS (2G) is being phased out worldwide.
In Germany (assuming this is where you are since you initially posted in the Deutsch category - I moved the post away as you used the english language), 3G was shut down in 2021, Deutsche Telekom will end 2G by 2028, Vodafone by 2030 for IoT, O2 has no firm date if I remember well.
So when that happens, Modules that only support 2G/3G will stop working. For long-term use, choose 4G LTE at least, or LTE‑M/NB‑IoT if supported (look at modules such as SIM7070G, SIM7080G, Quectel EC200, Quectel EG91, u‑blox SARA‑R412M...)

to save problems of interconnecting modules (a source of poor connections and intermittent problems) I would recommend getting a single module with microcontroller and 4G modem on same PCB, e.g. the TTGO T-Call (LilyGO)with A7670E (LTE/4G), Waveshare ESP32-S3 A7670E 4G Development Board, etc
have you considered LoRaWAN - saves cost of 4G calls

you would require a LoRaWAN gateway in the area
you can check the LoRaWAN TTN coverage using TTNmapper
there are plenty of LoRaWAN modules - try Amazon or Ebay - would recommend a module with a microcontroller and LoRa chip on same PCB, e.g. Heltec ESP32 LoRa V3 cost about £20 on Amazon in UK
