It is very unlikely to bring you much fun, if you start hard projects as a beginner.
I would suggest mastering the Arduino environment step by step,
and using small steps, start with LEDs, buttons, a servo, a motor, a stepper, and photo sensors.
App, voice control, and gesture control probably need some very capable Arduinos.
Powering a motorized robot arm is another problem to be solved.
