I get that with v2 of arduino-esp32, but with the recent v3.0.1

Compiling sketch...
~/.arduino15/packages/esp32/tools/esp-xs3/2302/bin/xtensa-esp32s3-elf-g++

yields

C++ Version: 202100

which is at least C++20
