Is my email visible to all, or just moderators?

Moderators. To the best of my knowledge none of us has ever used that information. I have not. We do not email without permission / invitation. If we not to communicate privately it is through the forum (personal messages).
Administrators have the same access as moderators. They are unlikely to even view email addresses.
Developers (I believe there is currently one) have direct access to the database. Given what I know of the Arduino folks, I suspect if a developer were to make any use of emails they would face criminal charges.
In other words, as far as I am aware, everyone who does have access protects your privacy as much as possible.
