This looks like it is set up to be a Shield for an Arduino. That's why the pins are arranged like that on the back of the monitor. Doesn't mean you can't use it with an ESP32 but there are easier methods.
In order to debug the problem we need the following things:
- As mentioned, the datasheet or a link to the display.
- The program you are trying to run that results in the display always being white
- A wiring diagram for how you have the display hooked up to the ESP32.
Without those we're just shooting in the dark.

The LCD must have a driver library. It is the driver library that will determine "compatibility" with ESP32 microcontrollers.
So it is critically important you know the GLCD make-model and recommended (suggested) Arduino library.
