I am a total newbie when it comes to encoders, and I need to read an in encoder installed on a motor (Chipcatalog - der Katalog für Cannabidiol und seine Komponenten - Chipcatalog) supposedly the supply voltage is 5 volts, so that shouldnt be a problem... but how would I go about reading pulses and stopping the motor after X number of pulses?
try searching the forum and the arduino.cc site with Google's advanced search, you will find lots of posts on this.

In general, you give the encoder 5V and you get two pins that are pulse signals. Reading the phase difference between them tell you the speed and direction.
