I am trying to invert the _Q pin (output pin) on the 74hc165n with a not gate but whenever I press a button it only registers the first bit input (10000000) any suggestions?

White - Clock
Black -Ground
Red - Vcc
Brown - Data

Please post a schematic of your project rather than a picture of it
Also where is this NOT gate in your photograph?
Also you have no 0.1uF ceramic decoupling capacitor on the power inputs of the shift register?
Maybe the XSTR is wired as an inverter? But, it's hard to see how it's connected, if it's connected at all.
First step: remove the inverter and try again. The inverter can be added later again when the but in your code or wiring has been fixed.
Post your code and a schematic circuit diagram - no Fritzing please.
Ooops, did you get the IC pins right? In top view, with the case mark at left, pin 1 is on the bottom left, Vcc (16) on the top left pin and GND (8) at the bottom right.
The 74x165 has both normal and inverted outputs, no real need for an output inverter.
