I understand the RN2040 can run at 921600.
It is written so in the datasheet and I am trying to know what is the max amount of data possible to send using the RN2040. Thus, I am seeing testing the maximum amount of data or the needed command to be sent using high baud rates (eg 921600).

I guess the best you can do, seeing you have one in your hand, is to suck-it-'n'-see. It either works or it doesn't, and I'm sure you can't do any damage.
People round here have used 500kBd with a Uno.
I have just tested the Uno at a baud rate of 921600 and it performed well. But need to test the capability of data sending of the ble module.

I have never actually heard of anybody actually using that rate, so this might be a record. You may find that you don't really need such speed.
You totally misunderstand the USB/serial connection for a UNO. The baud rate ONLY effects how long the code will wait between sending a message to the PC with the serial data. If the baud rate is low, there will be many more partially filled message. IF the baud rate is high, the messages will be fuller before sending to the PC.
