The Arduino Ethernet Shield 2 (Uno form factor) is supplied with a sticker on the underside giving the boards MAC address.
The MKR ETH Shield does not give any such information about it's MAC address.
I know that I can allocate my own MAC address, but I wondered why the difference between the two products?
Is using the 'real' MAC address any better than using a 'made up' one, or does it make no difference?

The sticker only provides an arbitrary unique MAC address. There is no technical significance to the specific address on the sticker.
So as long as you choose an address that is unique on the network, that address is as good as one provided by the Arduino company.
I don't have any information about that, but I would guess that the determination was made that the benefits did not merit the added manufacturing expense.
