more analog sensor inputs

Hello,

I was wondering if there is a breakout board or expansion board or whatever that can increase my analog pin count? and also if these boards are stackable to add even more.

There won't be many readings so I don't care about the latency but I'll need them in a lot of places. do you happen to know anything that can help me?

A Mega with 16 built-in may be a good choice. See THIS..

And @wawa this thing looks nice.... how many of those can I use with a single UNO? 2? because it takes 5 digital pins...... was just wondering.

It takes four digital pins (S0-S3) for the 16 switch positions.
Those same four pins can be used for up to six of those boards (or 16 on a Mega).
Connect the outputs (sig) of those six muxer chips to the six analogue inputs.
This will give you 96 analogue inputs (or 256 on a Mega).
