The HS-55 is close enough to 180 degrees but they're pretty small and fragile.

Unfortunately most servo specs don't list their maximum rotation angle nor their minimum and maximum pulse widths, a few do, but word from a user is probably your best bet.
If you don't mind modifying one, here's a video showing it (which is somewhat easy):

But there is a fundamental difference between a servo that can move 180 degrees and a continuous rotation 'servo'. The modified servo becomes an ex-servo, it's morphed into being a simple bidirectional variable speed geared motor, no longer able to be commanded to move to a specific point and stop there. Too many newcomers buy 'modified' servos expecting to get a servo with 'extra' capabilities, and instead getting an entirely different component which may then not perform the function they required in the first place.

for anyone looking for the same thing I found this futaba server specifically sold by parallax for 180 degree operation. I have one on order.
I got the parallax servo. works 180 degrees as advertised but moves with more of a lurch/overshoot for large displacements than the hitec ones i've used to date.
also, for anyone's interest, the safe pulse length range is about 550 to 2250 with 1400 midrange and it moves counter-clockwise for smaller pulses as opposed to my hitec servos which move clockwise.
kudos to parallax for filling the need.
I've got at least five different brands of standard hobby servos and all are capable of commandable ~180 deg rotation.
