I realize this - but will I still be able to drive them, but with lower moment output?
If you have not already bought the motor then I would strongly recommend choosing a motor that would be suitable for the Easydriver.
HOWEVER ... this is really putting the cart before the horse. You need to choose a motor that delivers the torque and speed you require and then choose a matching driver.
Could you recommend another motor?
I have some of these motors that will work with an Easydriver. However I have no idea whether they would be suitable for your project. As they have a much higher coil resistance they will generally have a lower maximum speed for a given power supply voltage.

For my learning - what would be the outcome of using the motors I specified with the easy driver?
Assuming you have set the Easydriver current limit at no more than the Easydriver max (I think that is 750mA) then you will get very much reduced torque and speed from the motors. I have no idea how much the reduction would be - presumably at least 50%.
