as far as I read, there is nothing published about any potential incompatibilities between Starter kit Grove Plus V3 (the shield, especially) and Arduino R4 Wifi.
Does some get some experiences with these both ?

I don't own a Grove Starter Kit Plus V3, but I use a product that predates the Grove modules: the CodeShield.
Here are its capabilities:
Inputs: switch, button, potentiometer, rotary encoder, thermistor, photocell, and hall effect sensor.
Outputs: Piezo buzzer, servo motor, RGB LED, LED, and a relay with screw terminals.
I have tested all but the rotary encoder and buzzer on the UNO R4 WiFi.
I used Telemetrix For Arduino Uno R4 for my testing.
So, most likely, the Grove kit will not be a problem.

We started a new course and we just wanted to know if we go to R4, from mkr & R3, or if it was too early. I read here & there, and in your words, that it is not too early
Not all Uno R3 libraries are compatible with the R4. This link shows some compatibility problems with the R4.
