Maybe try making them a few bytes larger.
For info I just tried replacing the "1" with "F" in the constructors with the same result.
As for the stringbuffer thing, I can't be certain but I suspect that it is an internal address for the data stream output from the game

I didn't mean the 0x1180 part, I agree that looks like an address of some kind. I meant the <7> part. Increase that to <8> or more and the other to <3> or more.
Oh, right - well, that represents the number of Characters that are displayed, for instance the Frequency is six numbers and a decimal point in this format NNN.NNN
The Preset is a simple two digit number NN
If I change those, I need to make sure that the display format is maintained

According to this page, it's the maximum length of the buffer. Increasing it won't change the display format.
@Lesthegringo this means I was wrong about the upload report. It does include the buffer memory.
The report is correct and the buffer size is included (because it is a static memory allocation).
The constructor
U8G2_SSD1306_128X64_NONAME_1_HW_I2C u8g22(U8G2_R0, /* clock=*/SCL, /* data=*/SDA, /* reset=*/U8X8_PIN_NONE);
looks a little bit strange. The HW constructor does not require clock and data arguments (they are fixed on AVR boards). Instead the constructor looks more like the SW variant. Can you try:

That glyph overwrites the two numbers that should be shown on that OLED, so if I refresh that parameter "22" appears, then when I refresh the 2.08" OLED that unwanted glyph appears

In the functions that refresh the displays, try copying newValue to a local char array, then using that in the firstPage() / nextPage() loop. It could be that DcsBios is altering the char array pointed to by newValue while the display is being refreshed.
