Its important you define the budget that you have allocated for your sensor, and from then search the web and decide what kind of sensor is most suitable for your application.
There is no "one size fits all" when come to sensors.
What temperature is the kiln normally working?
Getting good furnace temperatures also depends on sensor placement.

Analog sensors can have very high resolution. But with the 10 bit ADC there is compromise.
For both tetemperature anh humidity i like the ease of the bme280
