I imagine this is how they would have done maze games in the olden days before GPU cards.

I did program a similar 3D maze program myself 1983 on my first computer Sinclair ZX81.
Your display seems to be 48x84, ZX81 only allowed for 64x48).
ZX81 had screen of 24 lines with each up to 32 characters (yes, dynamic screen, after clear screen display size was just 24 bytes for the 24 line terminators). ZX81 did not have real graphics, but people used the a set of text semigraphics with block elements and dithering patterns for 64x48 graphics:
