Can I use an Arduino to read the signal, and send the reading over USB using this mitutoyo caliper. these have a very good accuracy and very durable for the price.

What signal do You plan to read?
Probably not. You'd have to open up the device and solder wires to some signal lines then interface with a MCU. Which signal lines would be a company secret.
There is plenty of advice on the Web and in this forum regarding reading the DRO of a digital caliper with an Arduino. My cheap Chinese caliper even has a slide off cover over the connection pins, but may not be the case with the upmarket models
Mitutoyo calipers uses SPC output.
