I would like to implement the above application using arduino. Please let me know what kind of sensor, hardware , sheild requirement need to do above application. I wanted to avoid using kinetic sensor.
My question is how they detecting the material selection
How they count the value product being picked & updated in item list.
& ofcourse list of hardware & sensor need to develop for project if i am using arduino.
Now if you were designing a product that would defeat the store's attempt to gather data about me ....

main intention about the project is improve retail experience.
Assume the similar kind of system installed in big shopping mall. with variety of product.
Either owner might come to know in billing cycle which product being sale long.
By this system owner might come across which product are more attracted . so next time he can use the same brand.

The "future" is already two years old
It being Old in US & UK or other country. But In INDIA it is new technology.
If you can give me proper information which sensor can be used for application will be more helpful.
You need a computer to collect, analyse and collate the vast amount of data. An Arduino isn't capable of doing that.
