Help with -80 Freezer Monitor Project

Hi I am a researcher at The University of Washington,

Was wondering if anybody would know how to code an arduino to read the input of an lcd screen line? Our labs have all these -80 freezers with important samples in them but we do not have enough staff resources to keep track of all of them with everybody at home. I thought a decent approach would be to put uno wifi inbetween the fridges output to the LCD screen showing the temp so that the uno could get temp information and post it to a website that we can monitor remotely.

To clarify the freezers have temp sensors. They post readings to an LCD screen. Easiest way to highjack reading would be to read freezer output to its LCD screen showing temp. Then post that reading via wifi to a UI for people to check on from time to time.

This shouldn't be complicated project in principle. There are plenty similar projects presented on the web.
However, I see the temperature sensor as challenge. I'm supposing -80 in Fahrenheit. It is about -62 deg in Celsius. Still, I do not know about sensor be able to measure it reliably.

La intención es buena, pero en la mayoría de los casos, está condenada al fracaso por la burocracia de los distintos países, y los distintos intereses económicos alrededor de ese producto.
Tenga en cuenta que cada respirador que se utiliza en una Unidad de Cuidados Intensivos UCI, vale en el mercado entre 25.000 y 30.000 Euros, al cambio entre más o menos 24.000 y 29.000 Dólares USA, cuando el coste real con motores reutilizados y Arduino, no llega a los 200 € ninguno de los proyectos que se han construido en casa, con toda la buena intención, los dejan utilizar en los hospitales, por lo menos en Europa

That is a self issued certificate by the manufacturer, that is you. Basically it is a declaration of CE conformity. There is no need to get anything tested by an external body. You only commit an offence if it is tested by an external test house and found not to comply. Someone has to pay for that which is not you.

So print out your own CE conformance certificates and show them that.

Not all EU rules are stupid, just some of them. Those not based on scientific evidence are stupid and are at the behest of large industry lobbying.
