I'm installing a new sewage tank in my boat. I would like to be able to monitor the level. The tank is made of three eighths of an inch plastic which I cannot see through. Would an ultrasonic sensor do the job
An ultrasonic ranging sensor won't work through plastic, and one placed in the tank will corrode almost instantly.
I use capacitive proximity sensors on large water tanks with 1/4" plastic walls, and ones with sufficient range should work through thicker. They give you a yes/no level indication. Use several to detect different liquid levels.
You can use ultrasonic but you would have to drill. I would also use automotive sensor and not the one that usually comes in the starter kit.

The DS1603L ultrasound sensor should do the job.
Or a cheap capacitive sensor can be used as level switch, if that's all you really need.
