I have a LILYGO T-Display-SE in Com8.
Every time I have to select a port I see a different descriptor. The latest is
Com 8 (Adafruit QT Py ESP32-C3)
yet the processor is an S3
Can someone explain this?
Why cant there be two drop down menus, one for board and one for port like the good old days

There is. The Tools > Board and Tools > Port menus are in Arduino IDE 2.x just like Arduino IDE 1.x. There is now an additional "Board Selector" interface that allows the user to select both board and port at the same time for some boards, but this is redundant to the old interface, not replacing it.
Where are you seeing this? From your other comment about there not being a dedicated port selection menu, I am given the impression that you are looking at the "Board Selector" dropdown menu on the toolbar:
But the <port address> (<board name>) format of the port as you wrote it looks more like how it is listed in the Tools > Port menu:
