I don't know if it's complete but the first sticky in Arduino IDE 2.0 - Arduino Forum contains the most relevant changes from 2.0.0 to 2.0.1.
The sticky is (in general) replaced by a new one when a new version hits the shelves.
You might also find them on github (no link at hand).

As sterretje said, I try to mention only the changes that are likely to be of interest to the users in the release announcement on the forum. If you want to see every single change, check the commit history here:
Arduino CLI is an integral part of Arduino IDE's functionality. The 2.0.1 release of Arduino IDE also included a bump of the bundled Arduino CLI from 0.27.1 to 0.28.0, so the Arduino CLI 0.28.0 changelog will also contain items that affect the Arduino IDE users:
