I would like to know what kind of sensor i can use to determine rumination activity and other activities like walking, laying, drinking, sleeping etc in cows. It should ideally send data to a nearby base station which would send data to a cloud.

I am a beginner, so if required throw some reading material my way.
The simplest is to simply purchase the monitors. If you want to build then you will need to list everything you want to monitor and find sensors to measure this or what you need to calculate the answer. Also this is a RF (Radio Frequency) device that is governed by every country inside its own borders and they are not all the same. You will need to determine how the data will be downloaded such as direct connect, RF, IR, etc. Once you gather this information you will be better able to ask for more help. You can always hire somebody to do the work for you, there is a for hire section on this forum.
Connect it reasonably tight to the cows body, you could see movement and orientation.
Next could be a GPS sensor.
Furthermore you might look at a mesh networking to transfer the data.
You are totally asking yourself the wrong question. You should be asking yourself, the cow is doing something, perhaps laying down, so ask yourself, what sensor output will be different only when the cow is laying down.
Consider telling us if the cow is "free ranging" or is part of a herd. They act totally different in a herd where they will be continually trying to see who is boss.
Building a sensor like the one you linked too, would be a reasonable challenge for an experienced engineer.
It would take a good while to learn all the electronics, RF and product design knowledge you would need to know so you would probably be better off hiring someone to do the task for you.
Also do appreciate there can be significant type approval and certification issues to overcome if you intend to sell such sensors.
I agree …This is not a beginners project , it is a complex task . For example powering it , dedicated pcb’s , packaging , development work with sensors you think may give the information you need ( such as developing an algorithm based on what the sensors provide to detect walking , lying down etc - there is no cow lying down sensor , you have to work through that ).
