I need proximity sensor that has a range of up to 25 or 30 feet, has the ability to communicate using Bluetooth or NFC? I need a flat sensor that is not too large, say maximum of 2 inches by 2 inches and thin. any ideas? I am a beginner so pardon my ignorance.

NFC stands for "Near Field Communication" and communication range is typically 4 centimeters maximum.

then i would need a proximity sensor that could detect humans but could communicate using BLE since the sensor would be on the project in my apartment but would need to communicate with my phone.

A web search for "human presence sensors" will turn up some possibilities. Heat, motion and mm-wave radar are among the possibilities, with radar returning distances to moving objects in some cases.

Pick an Arduino board with BLE and use that to read the sensor.
i want to be able to travel with my project and not need to take an Arduino board along
are there mm-wave proximity sensors that easily mate with ble communication chips? this is my second choice tho
