Has anyone heard of any Voice-to-Text (not Text-to-Voice) projects on Arduino?
If yes, can you describe what were the projects (in a general way), as well as the libraries that were perhaps used.

I recall a project that used a voice recognition module but it had a limited vocabulary and I don't think it could adapt to different accents.
A more general solution would be difficult to impossible I think - consider that although Alexa does it, the processing is done by powerful cloud servers. An Arduino could do the same thing, but at that point I would just use a commercial offering.
