I know that there is a tutorial on these accelerometers from sparkfun, but what is the difference between the three?

Each one uses an Accelerometer with slightly different range. I haven't compared the 3 datasheets in detail but here is a simple mapping.
The problem is that the Sparkfun webpages all point to the same datasheet (ADXL320). Here is a good summary of all of the Analog Devices low G accelerometers. Scroll the table to see all of the datasheets.
