Just got a new iMac, running Monteray 12.6. On my old iMac, I ran Arduino 1.8.5, what is the best one to install on my new machine.

The latest version. But not a beta test.
depending on how old this iMac is, you might want to stick to the latest Arduino IDE 1.8.19 as 2.0.0 might be too demanding but worth trying as it was just released
