Accelerometer - Telemetry system

I am working on a project of a telemetry system where I am looking in a accelerometer to carry the project out. Thus, I am searching a tiny accelerometer or a small circuit.
Could I use only an accelerometer connected to a power supply? Or should I use multiple Arduinos?
Could you recommend me any model?
I am new to this, so I will appreciate a lot your help.

You'll need a processor to read the accelerometer.

Is there any microchip with everything incorporated?

I've never come across one of them.

What will perform the telemetry?

The Arduino Nano 33 BLE Sense has an accelerometer on the PCB.

For a tiny accelerometer, you can consider the ADXL362. Another option is the LIS3DH

Instead of using multiple Arduinos, you can use a single microcontroller that has multiple analog input channels

The telemetry will serve to be introduced into a 1:32 or a 1:24 slot car (idk yet). To later collect the data and analyze it on a computer. For that reason, I'm searching the smallest and easiest circuit.

When I have been reporting about accelerometers, I have seen the LIS3DH, but I have a question, this one needs to be connected to a processor? It would be easier to connect than an arduino accelerometer to an arduino board? Or it would be more difficult?

I've searched microcontrollers too, although I have never worked with one of them. Could you recommend me any?
