What about something like a Mean Well RS-15-5 with a USB to Bare Wire Cable?
If you need more voltage for the sensor you could use a buck converter for the Arduino down from a higher voltage.
Well there is a resettable fuse in most Arduinos that will limit the current through the USB cable to about 500mA.
