A heart rate monitor might be possible not sure.

A calorie monitor, I have no idea
Since calorie is a unit of heat. Relating that to a human actually uses kilo-calories. You can compute the kilo-calories by knowing the body mass (weight) and the temperature rise during exercise.
My treadmill asks for my weight and then computes kilo-calories while I walk. Must have some formulae that I don't know about. You can likely come up with a formula for what ever you are wanting to know about calories.

There is also a project named "calorie meter" that uses an accelerometer to measure movements and calculate calorie consumption...

You can use a piezoelectric sensor to measure heart rate by programming it in a way to detect the pulse rates in any of the superficial arteries of our body. You can connect it to an arduino and display data on an lcd or oled or you can transmit data wirelessly using an esp.
For Calorie measurement it isnt directly possible but as mentioned in post #3 you can use a person weight and measure it. You can probably attach the piezoelectric sensor in a shoe and measure the pressure applied while running

What does your oscilloscope show when then piezo is placed over your heart?
