Collecting and storing force data

Hi all,

I am currently working on a project to collect static thrust data from a series of propellers to determine the best results for an RC Plane we are building. If possible, I would like to setup a load cell and use an arduino to collect force readings over time from the load cell.

Wanting your thoughts on the best way to go about this...
