I've looked and looked... this seems do-able... but I'm too "newb" to tackle it...

Think "DisplayLink"...
I have some Mimo 7" touchscreen USB DisplayLink monitors, but DisplayLink is a universal standard used by several USB monitor mfr's... up to full HD monitors, at least up to 21" as far as I know... probably even bigger. (though most are not touchscreen)
Not only are there LCD monitors with built-in DisplayLink... but there are DisplayLink adapters for any LCD monitor of your choice.
It looks to be a natural...
I'm not assuming or dreaming anything fast moving, mainly a static graphical UI screen, with a few updating fields... even as slow as 3-4fps would probably be sufficient for me.
My project will be controlling multiple DDS generators, displaying frequencies and generated waveforms... etc.
I don't have $100 to throw at new 7" touch monitors, especially since I have some of the Mimo monitors already. If I need a bigger display, I just get a 10"... or 15", 19"... etc.
"Used" (like new) DisplayLink monitors are pretty inexpensive... I bought some for $35 each. Fully packaged... look great.
It may require me to use a USB hub in order to provide operational power to the USB monitor... they use around 350mA or more.
