i recently purchased some spectrasymbol flex sensors 2.2", but when i check one-by-one with multi-meter, it showed the difference in resistance between a 90-degree bend and a fully straight position is only around 0.5k ohm, or sometimes even less. is this normal ?

I have no idea. It would be very useful if you would post a link to the exact sensor that you bought (and preferably the datasheet). You might have one that is not linear (log) and maybe you're bending ot the wrong way?
From this datasheet one might conclude that there are various options.
Not familiar with flex sensors or the product so more than likely can't help further.

I believe so, because based on my understanding, the side with the printed words should be the inner side of the sensor.

What is the resistance when it is flat?
when the sensor is flat, the resistance measures around 7.5k ohms. when I bend it to at least 90 degrees, the resistance increases to about 8k ohms.
If it looks like this and is 55mm long, then the resistance should be 25K when flat
Are you sure is'a a spectrasymbol 55mm sensor?
If it doesn't work one way - does it hurt to try the other?

yes, the sensor looks exactly like this, and the active part is also 55mm.
Two terminals - not a lot to get wrong.

The linearity of the response curve is not a spec they guarantee. Is it out of spec at a 180° turn like they show?
Are you using an ohmmeter ?
If it is indeed a spectrasymbol 55mm flex sensor and it only reads 7.5K, I would say it's either damaged or it's a custom made sensor, or your ohmmeter is broken.
If it's a custom sensor then going from 7.5K to 8K with a 90 degree bend may be within specifications

i checked five of the sensors, and at a 180° bend, the resistance is around 9k ohms
