How do I read high temperatures with an arduino

The PET Bottle project I'm making requires temperature sensing up to 260 C, and my simulator (Tinkercad), only has a 125 C TMP36. How do I adapt that to a different thermistor / thermocouple?

Select a temperture sensor fits to your requirements and design/code the physical and logical interface.

I believe that you'd use a type K thermocouple and a specialized thermocouple amplifier.

Thermistors can be used at that temperature. They are popular to measure temperatures of 3D printer extruders and heated beds.

search about Max6675 Type K Thermocouple.
Supports up to 600ºC.

Also look at platinum rtd sensors. They are easier to use than a thermocouple (although there are support chips that help with a thermocouple) and have better linearity than thermistors.
