how do I change this circuit so a strip of 12v led's are powered instead of a single led.
I have a plud with a transformer that steps the voltage down to 12v.
Do I make another seperate parallel circuit?

Use a relay in place of the LED.
You need a driver that can supply the current needed. Either You use a driver board or a logic n-channel MOSFET transistor for each line of LEDs.
Playing with transformer... Transformers delievers AC, useless for LEDs.
If that "transformer" is in fact a complete power adapter it may very well produce 12V DC.
A MOSFET is the easiest way to switch the LED strip.
